CIDER GLAZED APPLE-FIG SPICE CAKE


Warm spices, apple cider, applesauce and fig preserves come together deliciously in this amazing spice cake. It's easy to make (everything is mixed in one bowl), moist, and tastes as good as it smells when cooking. It's a great way to enjoy autumn fruits, flavors and spices- Yum!

Recipe Uses Our: TRUE CINNAMON, Nutmeg Powder, Ginger Powder, Clove Powder

Ingredients

3/4 cup sugar

1 cup flour

1/2 tsp baking soda

1/4 tsp salt

1 tsp True Cinnamon

1/2 tsp Nutmeg Powder

1/2 tsp Ginger Powder

1/4 tsp Clove Powder

1/2 cup vegetable oil

2 eggs

1/2 cup buttermilk (room temperature)

2 tsp vanilla extract

1/2 cup fig preserves

1/2 cup unsweetened applesauce

1/4 cup chopped walnuts

1 cup (sifted) powdered sugar

2 - 3 Tblspns apple cider

Directions: Preheat oven to 350 degrees. Spray with cooking spray a 9 inch cake pan. In a large bowl, mix together the first 8 ingredients. Add the oil and eggs and stir until incorporated. Add the buttermilk and vanilla and stir to combine. Fold in the fig preserves, applesauce, and walnuts. Pour the batter into the prepared pan. Bake in the preheated oven for about 30 minutes or until a knife inserted into the middle of the cake comes out clean. Cool the cake on a rack for 10 minutes. Make the glaze by whisking together the powdered sugar and cider. Pour the glaze over the warm cake.
