OREGANO (Dried Herb), Garlic Granules, Yellow Mustard Powder
Ingredients:
1 cup Fresh Basil Leaves, chopped
1 large Cucumber, cut into cube-sized pieces
2 Shallots, diced
8 ounces Monterey Jack (or Mozzarella) Cheese cut into small cubes
15.5 ounce can Chickpeas (Garbanzo Beans), drained & rinsed
3-4 medium-sized fresh Tomatoes (yellow and red), cut into large cubes
1/3 cup Olive Oil
4 Tblspns Red Wine Vinegar
1/2 tsp Garlic Granules
1/4 tsp Salt
1/4 tsp Pepper
1/2 tsp Yellow Mustard Powder
1 Tblspn Oregano (dried herb)
Directions:
Combine the vegetables, chickpeas, cheese, and basil in a large salad bowl. In a small bottle, make the dressing by mixing the oil, vinegar, and herbs/spices. Pour the dressing over the salad and toss. Refrigerate the salad for 1 - 2 hours before serving.
