This is a moist, slightly sweet quick bread that is delicious served warm with a little pat of butter. The figs are complemented by a hint of orange and the Ginger and Nutmeg spices. This is an easy bread to prepare and it makes a perfect breakfast or snack, served with a cup of tea. The natural sweet flavors of figs made even better with orange and Ginger.
GINGER ROOT POWDER, Crystallized Ginger, Nutmeg Powder
Ingredients:
1/2 cup butter, softened
1/4 cup light brown sugar
1/2 cup granulated (white) sugar
1/2 cup sour cream
2 eggs
1/4 cup orange juice
Zest from one orange
1 tsp orange extract
1 3/4 cup flour
1/2 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1/2 tsp Nutmeg Powder
2 tsp Ginger Root Powder
2 Tblspns Crystallized Ginger
1 cup chopped dried figs
1/2 cup chopped walnuts
Directions: Preheat oven to 350 degrees and lightly spray (with cooking spray) a 5 x 9 inch loaf pan or 3 mini loaf pans. Cream together the butter
and sugars until light and fluffy. Add the eggs, one at a time, and then add the sour cream, orange juice, zest, extract and mix until combined. In a separate bowl blend together the flour, baking soda, baking powder, spices, and salt. Add the flour mixture to the butter mixture and mix until combined. Fold in the figs and the walnuts. Pour the batter into the prepared loaf pan and bake the bread in the preheated oven for about 50 minutes or until a knife inserted into the middle comes out clean. Let cool for 10 minutes and then remove the bread from pan.
