This is a rich, chocolate bread that most will never guess contains zucchini! The zucchini helps make the bread moist and the Garam Masala spice is a wonderful, exotic complement for the chocolate. With the chocolate chip topping - this bread can easily be served as a delicious, decadent dessert.
Ingredients:
2 eggs
1 cup vegetable oil
1 cup (white) sugar
2 cups shredded zucchini
1/3 cup melted dark chocolate
1/4 cup cocoa powder
1 tsp vanilla extract
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 1/2 tsp Garam Masala
1 1/4 cup semi-sweet chocolate chips.
Directions: Preheat oven to 350 degrees. Grease (with cooking spray) two (8-9”) loaf pans or two 8” round cake pans. Mix together the oil, sugar, and eggs for about 5 minutes. Add the melted dark chocolate, vanilla extract, and zucchini and stir until combined. In a separate bowl blend the flour, baking soda, baking powder, salt, cocoa powder, and Garam Masala. Combine the flour mixture with the egg mixture. Fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared pans. Sprinkle the remainder 1/2 cup of the chocolate chips over the surface of the bread in each pan. Bake in the preheated oven for about 40 minutes or until a knife inserted into the middle of the bread comes out clean. Cool completely on a wire rack.
