Fresh zucchini and corn are mixed together in a perfectly spiced batter for this delicious, old southern dish. Garlic Salt, and the Garlic & Herb and All Purpose blends are added to compliment the flavors of both the zucchini and corn. They are wonderful as a side dish or a vegetarian meal. Mmm - zucchini love!
Ingredients:
1 cup flour
1/2 Tblspn baking powder
1 tsp All Purpose
1/2 tsp Garlic Salt
1 Tblspn Garlic & Herb
Fresh ground pepper
1/2 cup milk
1 egg
2 Tblspns butter, melted
1 1/4 cup grated zucchini
Kernels from a large ear of (cooked) corn
1/2 cup shredded sharp cheddar cheese
Oil for frying
Fresh Parsley for garnish
Directions:
Mix together in a bowl: flour, baking powder, spices, and pepper.
In a separate bowl mix together: egg, milk and butter. Combine the flour mixture with the egg mixture. Stir in the grated zucchini, corn and cheese. Let dough refrigerate for about 30 minutes before frying. Drop small amounts of the batter (about 3 inches wide clumps) onto a hot skillet with the bottom covered with oil. Fry for about 2-3 minutes on each side, until golden. Serve immediately.
