This recipe is one of my favorite ways to make salmon. It is quick, inexpensive, and oh so delicious. These patties can be used as a main dish for dinner (top them with your favorite sauce), or they can be eaten on a butter-toasted bun for a wonderful sandwich. Dill Weed, Seafood Rub, and Garlic Powder are the spices used to give these patties just the right flavor and to compliment the salmon. It is a recipe for healthy eating that tastes terrific.
Ingredients:
1 can Salmon (about a 15 oz. can) - debone and remove the skin*
2 eggs
3/4 cup mashed potatoes
1 cup panko breadcrumbs (reserve 3/4 cup to coat each Pattie)
2 green onion, chopped
1 tsp Worcestershire sauce
1 Tblspn Dijon mustard
2 Tblspns (dried) dill weed leaf
2 tsp seafood rub
1\2 tsp garlic powder
Oil
* Note: Fresh salmon may also be used
Directions:
1. Mash salmon so that there are no large chunks. Combine the potatoes with the mashed salmon. Add 1/4 cup of the panko breadcrumbs and then
all of the remaining ingredients. Mix together, making sure all ingredients are well combined.
2. Form round patties from the mixture (makes about 6 - 7 patties). Coat the outside of each patty with the reserved breadcrumbs. Put enough oil to cover the bottom of a fry pan. Heat the oil and fry each patty in the heated oil on medium high heat. Fry patties until golden on each side.
