Here is an old southern treat that gives a different perspective to those delicious summer-time tomatoes. Using this recipe, my family enjoys green tomatoes almost as much as the fresh ripe ones. It includes Cayenne Pepper (just a small amount) to give extra flavor and a little 'punch,' and Garlic Pepper which is added for an additional spice that really goes great with the green tomatoes. Try them by themselves or put them on a hamburger or use them as the tomato on a BLT sandwich. However you serve them - these tomatoes are sure to be a hit.
Ingredients:
4 Medium -Large sized Green Tomatoes
1 Cups of Italian Seasoned Bread Crumbs
1 Cup Flour
4 Eggs - Beaten and mixed with 1/4 cup water
1/4 Tsp Cayenne Pepper
1 tsp Garlic Pepper
1/2 Cup Oil
Salt to taste
Mix the Cayenne Pepper and Garlic Pepper with the flour. Slice the tomatoes (not too thin and not too thick ). Heat the oil in a heavy fry pan. Dip the sliced tomatoes in the beaten egg/water and then dip them (both sides) in the bread crumbs. Then, dip them again in the eggs and then in the flour mixture. Fry the prepared tomatoes in the oil until golden. Remove them from the fry pan and place them on a paper towel to absorb any extra oil. Sprinkle them with salt while hot.
